Mexico La Laja Honey

Every year, we bring in this honey-processed coffee from the La Laja family because it’s a true crowd favorite - consistently delicious, harvest after harvest. The family operates their own farms and mills in Veracruz, Mexico; this lot is from their Finca La Laja and Finca El Mirador farms. For the honey process, coffee cherries are depulped and dried slowly on covered raised beds for 20 days. The result is a rich, velvety cup with a creamy chocolate base and a juicy, fruit-forward sweetness we look forward to every season.
Not only do they provide incredible coffee, but they work with other farmers to grow and process small harvests from seedling to export. Established in 1920, they have helped create a supportive coffee community and educate others on processing and technical training.
Expect aromas of peaches, apricot, and honey in the dry fragrance, which open up into a smooth, balanced cup when brewed. Notes of milk chocolate and cane sugar shine through, accented by a lively orange acidity that reminds us of an orange chocolate bar. Rich, indulgent, and endlessly drinkable, we think this coffee is truly worth dancing about!
